The course is designed to provide trainee with skills, knowledge and attitudes required to produce and serve meals as well as carry out accommodation procedures in a catering and accommodation establishment.
The course is packaged in two modules. Each module prepares the trainee to perform to perform particular tasks. A trainee leaving module 1 is equipped with knowledge, skills and attitudes to perform as an operative in food and beverage production, service and sales while a trainee leaving module 2 is able to perform as an operative in accommodation operations. The course requires the trainee to spend 20% of their time on theory and 80% on practicals. It has lessons that require the trainee to address issues on life skills and emerging trends through research. The trainee is encouraged to take lessons in a foreign language of his/her choice at her own time.

The course is designed to have 1980 hours.
Entry requirements
A trainee enrolling for this course should have any of the following minimum requirements.
- Passed Kenya Certificate of Secondary Education (KCSE) with an average grade of D plain
OR
- Passed relevant artisan course
OR
- Equivalent qualifications as determined by the Kenya National Examinations Council (KNEC)
